Fresh bouquet with notes of tomato and freshly cut grass, enriched by a hint of almond.

Of great structure, with a strong but gentle character. Scent of rocket and tomato notes.

Oil with a high content of polyphenols and oleic acid. Rich in vitamin E and oleuropein.

COLLECTION METHOD
Harvest earlier than ripening. It is done by hand, with the help of mechanical facilitators. Start early in the morning when the temperature is still cool.
